Enzymes function best when they are in specific environments. Temperature and pH are two environmental conditions that can have significant impacts on enzyme function.
For now, you will focus on proteases, enzymes that break down proteins into their component annino acids. Pepsin is a protease that is found primarily in the stomach of mammals where it helps digest proteins present in food
1. Reset the simulation to its defaul settings. Note the initial amount of proteins in the solution and the color of the tube with the biuret solution indicator.
2. In the Enrymes section of the simulation, select "Add Pepsin."
3. The delault pH is 7. Run the simulation at pH 7 and make a note of the amount of amino acids produced after 20 minutes and the color of the tost tube.
4. Next, run the simulation at pH 5 and note the concentration of amino acids atter 20 minutes. Also note the color of the lest tube
5. Run the simulation at pH 2 and at pH 12 . Pay aftention to how the concentration of amino acids produced varies with pH .
